Ever wonder why gluten free foods might be more expensive? A good quality wheat flour will cost upwards of $14+ for 50 #. A med grain good GF quality brown rice costs upwards of $88 for 50 #. The other GF grains like sorghum, millet, teff are also exponentially more expensive than wheat flour. And that’s before you add the cost of milling and labor! Regular bakeries get flour, we get grain!

 Take for instance, a loaf of bread. One cup of regular wheat flour  =  the following in GF products: sorghum, millet, tapioca, potato starch, corn starch, xanthum guff, and then either teff, gf oat, chestnut or the like for flavor.  Someone has to mill, measure and mix all these things to get the equivalent of one cup of wheat flour. So when you account for the extra cost of ingredients and the labor, our product has far less mark up than most wheat-based bakeries.  That’s why we need to raise money for this untimely move.
