December 9th is creeping up and will be here before you know it. This is a once in a lifetime chance to learn the secrets of  stellar gluten free baking. We will teach you how to make food that anyone will enjoy.  My gluten free journey started in this village, so it’s fitting that the class is held there. It was Easter and I had 17 people over for dinner, when suddenly I stood up and said, i’ll be back. I never made it back to the dinner table. But I did spend 3 days in the hospital, where i was eventually diagnosed with celiac disease.

I’m a life long baker. Even through my 25 years as a top international lawyer, I baked. And continued after I was diagnosed.  I hunkered down in this village and started to explore how to make food that tasted good but was gluten free.  And as importantly to me, dairy free. I went on a binge of looking at ancient ways of baking, including using fruit yeast and studying the grinding properties of different grains. Originally, I planned on opening the first gluten free bakery in France, but life had other plans and I ended up in Cambridge where I opened Violette Bakers.

Many people ask where i get my recipes. My grandmother is my inspiration, although her recipes had no measurements, just ingredients, and if i asked her for measurements, she would tell me to use as much ingredient as the dish needs. (Thanks, Gran!) Our Pizza is her inspiration. As is our cornbread that you all love. Ditto our pecan sandies and many other things. I bake for myself, and i’m very picky about “mouth feel”, taste and quality of how the food makes me feel afterwards.

I’ve learned that Method is as important as ingredients. And this is why so many gluten free recipes online don’t work when you try them at home! It’s 50% method/ 50% ingredients that make a really stellar product.

We are lucky this year to have a very talented, creative and experienced chef from our Violette team joining us in France. Sezgi is a fantastic designer and her work is top notch. Plus she is kind and gentle and a gem to work with.
