I have to say that our Lemon Chess Pie with Cherry Compote or Plain Lemon is fabulous. Plus we rolled out the tops with this beautiful rolling pin. Our pie crusts are all hand rolled — almost all bakeries use a dough press to make crust, which works for regular crust, but not so well for gluten free. We want our GF crust to be tender and flaky and that’s why we hand roll all our crusts. (If you’d tried the GF crusts in the freezer section of the grocery store, you’ll know what i’m talking about — those are all mass produced on machines, and taste like it!) Having a pie with a top crust means twice the work, and then rolling with this pin is that much more finicky and time consuming. But this pie is worth it! It’s a special pie we make only for a few weeks a year. Don’t miss out.

It’s bagel week and we won’t have them again until Aug 18th at the soonest. So Stock UP!
We are closed July 25- Aug 3rd, and if we don’t hire at least one person to work the counter this next week, we will have to be closed until August 10th because we don’t have enough staff to accommodate vacation schedules. We have the order platform blocked for July 25-Aug 3rd, but please be aware it is possible that we will have to block all the way until the 10th if the dire staffing problems we are having, aren’t resolved a tiny bit by next week. At the moment, Leesteffy has to work every role we have at the bakery in order for the bakery to stay open. This isn’t sustainable. And yet, we have little hope that it will resolve before the end of the year. If she seems tired and cranky, this is why!
