General News
Farmers Market season is here. We will be at Copley THIS FRIDAY. Don’t forget — you can preorder through our regular ordering platform and pick up directly at the market. Just choose “Delivery” with $0 delivery and write Copley in the Special Instructions box.
And yes — we’ll have donuts for walk-ups only.
French Honey
Our honey is produced in the Occitanie region of Southern France
by a small family-run producer called Miel Surfin.
Except for the Gingerbread and Hazelnut honeys, these are natural honeys with no added flavorings. They are harvested from bees living in distinct ecosystems, and the pricing reflects both the rarity of the honey and the difficulty of building and maintaining healthy environments for the bees.
Lavender Honey (Miel de Lavande)
Pale yellow with a velvety texture that crystallizes into a pearly white. Delicate floral notes with a subtle fruity sweetness. Wonderful in pastries, crème brûlée, candies, and nougat.
Acacia Honey (Miel d’Acacia)
Pale gold and very slow to crystallize. Lower glycemic index than many honeys. Light, delicate, floral, and perfect in tea, yogurt, fresh cheeses, or over berries.
Mediterranean Honey (Miel de Garrigue)
Creamy with a golden color and fragrant notes of thyme, rosemary, and lavender. Beautiful in vinaigrettes, savory sauces, lamb dishes, and fish.
Chestnut Honey (Miel de Châtaignier)
Dark, powerful, and only lightly sweet. Complex with tannic, savory depth. Excellent with goat cheese, duck, and deeply savory dishes.
Forest Honey (Miel de Forêt)
Dark amber with woody notes and hints of licorice. Less sweet than floral honeys. Delicious on toast, in tea, or paired with sweet-savory dishes.
Thyme Honey (Miel de Thym)
Dense and aromatic with a lingering herbal sweetness. Wonderful in baked desserts, pastries, roasted fruit, and marinades.
White Heather Honey (Miel de Bruyère Blanche)
Rare and naturally creamy with notes of salted caramel and licorice. Exceptional with goat cheese, gourmet toasts, and desserts.
Gingerbread Honey Spread (Pain d’Épices à Tartiner)
A comforting honey spread blended with warm spice flavors. Perfect on toast, pancakes, or folded into desserts.
Hazelnut Honey (Miel de Noisette)
Acacia honey blended with roasted hazelnut pieces. A new item Miel Surfin is currently testing. Let us know what you think.
