Bagels Weds-Sat, THIS week

Get your bagel fix this week. Our bagels are NYC style, slow rise sourdough bagels. You can get them at the window, but its always best to preorder, particularly if you want a dozen or more. Our bagel’s freeze well. We recommend slicing in half before freezing.

This Saturday, the Special is Scones, which are my favorite treat at the bakery. This week’s scones are  Pumpkin Spice (DF), Blueberry-Blackberry (DF), Brie & Sour Cherry, or DF Smoked Cheese with Mushrooms and Caramelized Onions. Our scones freeze well.

Coming up next week are our donuts, including Cider Donuts. These sell out fast at the window, so best to get your preorders in. Our donuts freeze well. If you aren’t eating them the same day they are made, you should freeze them or pop them in the microwave for 20-30 seconds to refresh them. They contain no preservatives.

Gluten Free Baking in St Bresson, France!

Wild mushrooms are famous in this region.

After a week of hard work in France, I was able to nail down most of the housing. Houses/rooms in the village will be a 1-5 minute walk to the town hall where the class is being held. The villagers were happy to help supply housing. In return, I agreed that there would be no cooking in any of the village houses.

We are providing all meals. If you want to cook for yourself, you will have to sign up for one of the gites or chalets outside of the village (2+km walk in hilly country terrain.) We will have a van that will pick up/drop off at these locations at specific times each day.  The village rooms will accommodate a single or a couple. People traveling with additional family/friends, will have to book one of the chalets or gites. The bonus is the gites and chalets all have pools, although one gite has specified no young children due to the pool.

Meals will be served under light strung plane trees, next to the Bocce court, and across from the town hall. We were thinking it would be fun to teach people bocce and have bocce tournaments at night after dinner. The Mayor is hosting aperitifs on the first night so that the class participants and the villagers can meet and greet. He is also sponsoring a Spectacular (basically a french style music or theatre production) one night. We are deciding the night, but it will likely be Pizza Night. Fun historical fact, Napoleon’s troops planted thousands of plane trees all over the south to provide shade to the troops. They are a hallmark of the South.

Class Schedule:

The plan is to have people arrive on Sunday and to have a kick off meal Sunday evening.We assume many will have just arrived from the USA and will be tired, so not a good day for class.

We will have two class sessions Monday, Weds and Friday. Tuesday, Thursday and Sat we will have one class session and then one trip somewhere either in the morning or afternoon. On Tuesday afternoon we will go to Saint-Guilhem-le-Désert  There one can visit the historical sites, visit artist studios, shop, hike to the top of a mountain where there is a deserted monastery, or go zip lining down in the river below. We will have dinner in St Guilhem.  On Wednesday night the owner of the local Creperie will come to the village for Crepes night. There will be a choice of savory and sweet crepes and some of the villagers may join us.  On Thursday morning we will go to the market in Anduze.  After the market we will either stay in Anduze for lunch, or will drive the short distance to Sauve, another medieval village. On Saturday we will have class in the morning and then leave for a picnic in a lovely area of the Cevennes where Robert Louis Stevenson wrote Travels with a Donkey in the Cévennes. We will return Saturday evening to St Bresson where we will have a simple meal of traditional pistou soup.

Signing Up:

We are pricing the class + housing + meals (including wine with dinner) as a package. (Dinner in St Guilhem and lunch in Anduze/Sauve not included in the package.) People who wish to stay in one of the hotels (10km away) can choose a class only option. You will be able to sign up your Plus 1/family for the meal plan as well if you choose. If traveling with a family, please choose either a whole chalet or one of the gites in Le Camp. The chalet’s sleep 6-8 but we are treating them as 2 bedrooms. So if you are traveling with more than yourself and a partner you will need to book two rooms in the same chalet.

You can also purchase meals by giving 2 days notice (so the chef can buy enough ingredients) for your Plus travel partners. It will be much cheaper, however, to purchase the package of meals as that allows us to buy in bulk ahead.

I hope to have the registration and sign up on our  order platform by the end of the month.

At registration you will need to pay 25% of the package cost. 50% will be due mid-January. The remaining 25% will be due mid May. These payments are non-refundable, unless someone from the wait list takes your place. If there is a major event that prevents travel, the trip will be postponed. We have costed this trip out based on prepaying for many things, including bringing in what we need to St B for the class.  We expect there will be a waitlist, as many more people than we have room for have indicated interest. Plus we are pricing it to be affordable for most people.

Our garden is in full of outrageously beautiful Dahlias.  We’ve continued candying flowers like crazy to stock pile for when gardening season is over.

Deadlines:

Deliveries are Thursday and Friday late afternoon only and Sat. Please do not request an early delivery on Thursday or Friday. We can ask, but typically, the delivery people can not accommodate an earlier time.
