Gluten Free Baking in St Bresson, France!

I arrived in France today and went right into meal planning and week structure with our meal chef. We plan to kick off the week with a dinner on Sunday evening, with participants arriving Sunday. Most flights from the USA get you to Montpellier by the morning, but if you are like me, without a lot of sleep, Sunday will be a difficult day for most. Certainly not a day to concentrate on baking classes.

Monday, Weds and Friday, we will have two baking sessions, morning and afternoon. Tuesday, Thurs and Sat, we will have one, either morning or afternoon. Tues, we will bake in the morning and then, after lunch will go to Saint Guilhem le Desert an ancient village with a fantastic abbey with working gardens. In St Guilhem you can sight see, art gallery hop, shop, hike/rock climb to the top of hill where an abandoned monastery stands or go swimming/jumping off a waterfall cliff. In the evening we will gather for dinner at one of more restaurants. On Thursday morning we will go to the market in Anduze. In Anduze you can market, shop or go into the myriad pottery studios in the area. We might even have time to stop at Sauve going or coming. We will plan to eat lunch in Anduze. On Saturday, we will have our last class in the morning, and then go for a picnic at my friends house (plus 1000 hectors of land) in a small hameau. They have over 100 show horses, and a pottery school, and they will have their summer extravaganza (as they are called here) that weekend, to correspond with our visit.

Foodwise, we’ve planned the week out as well. I am talking to the owner of a crepe restaurant to see if she will come on Weds evening to do an evening of crepes for us. Friday we will make pizza, we will have fresh trout and ratatouille. The chef has asked if people will like lamb, so one of the questions when you sign up is whether you are vegan, veg, DF or meat eater.

The biggest reason i’m here this week is to scope out housing. This area has many (a majority) of second homes, but most people don’t rent them out. So we are approaching villagers to see if they want to rent their houses for that week. The mayor and village council got enthusiastic about helping with this this afternoon, so will likely send out a letter to residents asking if they have a house or room to rent the first week of July.

We planned out where we will have our meals (under several plane trees in a grassy area near the Bocci court, where we will string lights.) We will put out tables, and perhaps even a tent for self serve food. We thought it might be fun to teach everyone Bocci and have a weeklong Bocci tournament in the evenings.

The chef is following up with someone who makes outstanding ice cream to see if we can  get her to bring us some, but she is planning on moving away, so we can’t get our hopes up.

We will have activities MWF for your Plus One/Traveler partners. We haven’t fully planned those days out yet, but one day will definitely be a wine and cheese tasting day. Tuesday and Thursday they can swim at the Cascades, kayak or go hiking in the beautiful hillside.

We have three times the number of people now communicating interest than we will have available space for. So if you are serious, please read our weekly blog so you know when we post sign up. We will require an initial deposit, with a second payment in Jan (so you can ask for this for Christmas/Hannukah), with the remainder due in May. That will also let you spread the costs, as you will also have to pay for your airfare, housing  and car rental if you want a car.

As long as the frost holds, we will have beautiful Dahlias for you Special Occassion Cakes!

Our garden is in full of outrageously beautiful Dahlias.  We’ve continued candying flowers like crazy to stock pile for when gardening season is over.
