This is the time of year when wholesale food prices go way up–no it doesn’t make sense, with greater demand the prices should go down, but they don’t.  So its always a nail biting time for me. (This is also why we needed to PRE ORDER our ingredients!)  We don’t loudly promote that we use organic products–the emphasis is more that we are Gluten Free, but the truth is around 90% of what we use is organic. And it does cost more. Most of the time a lot more. For instance, we just ordered Molasses. It will cost us $90 for organic, whereas the non-organic is $32. Our Pete and Jerry organic eggs are  $4.65 a doz, whereas factory farmed eggs are under $2. Our organic chocolate is double + the price of non-organic. Ditto our organic sugar and organic fruits and veggies. For instance, the blackberries i just ordered were $95, as opposed to $42. No other bakery in the area uses the plethora (or any!) of organic ingredients that we do. (So why are their prices the same as ours?) Nor do they incur the extremely high cost of gluten free (GF) ingredients. We use the best inputs not only to make our food taste good, but because we think it is healthier for our bodies and our planet.

And we use less sugar than most wheat based recipes because GF flours are more “transparent”, meaning flavors other than the grain come thru more sharply. “Sweet” is a flavor. When you’ve eaten a GF product that is sickly sweet, its not because they used extra sugar, its because wheat masks flavors including “sweet”–so you get more sugar without the sweet taste in a wheat based product.
