It is graduation cake season. Please get your orders in pronto.
Things to note: We only use organic food based dyes. Normal bakery dyes are all chemical. We can’t get bold colors like bright red from our dyes. Only chemical red dye will give you that. So please keep that in mind when asking us to match logo colors. We will get as close as we can.
Bagels
This is the week you can buy bagels in bulk! Every week people ask to buy in bulk and every time we say we have bagel week ONE TIME a month. Bagels are laborious to make and we have to clear the decks of other things to make them. The black olive ones are my favorite. They come in sesame, poppy, everything, cheddar and black olive. Always best to preorder for bulk!
Gluten Free Baking Class in France.
We have TWO spots left. Leesteffy has confirmed all the houses we will use in the village for the students to stay in. We have ONE house left with 2 bedrooms. If you are feeling stressed about anything (haha, aren’t we all about so many things), this is the trip for you. To die for views, ancient medieval storybook french village perched on a 7 km hill. Where the birds and peacocks chirp and the goats and sheep graze. Absolute perfect environment to decompress and get away from the news. The villagers are looking forward to our hosting this class again. Sunday night we kick things off with a little cocktail party for the class and those who live in the village.
During the week, between classes we will go wine tasting / picnic-ing at Domaine de Blancardy (trust me, this is a place you want to have a destination wedding!) and spend the day in Pezanas, after going to its wonderful open air market in the morning.
Not to mention, you will learn how to make sourdough, challah, cake (dairy, df, vega) and frostings (ditto), eclairs, tarts, french macarons, pumpkin bundtlettes, pizza dough, french apple cake, cheese cake, cinnamon rolls and dubai chocolate. (With donuts and bagels on the catering menu!)
You will regret if you don’t sign up. This is our last year of doing this class, as Leesteffy will be retiring in 1.5 years and moving on to other adventures in Europe full time.
New Items:
Bake it Right. Every week, typically on Wednesday, we are trying out a new GF sourdough recipe, mostly following wheat based trends on social media. This week we are going to try sourdough biscuits. If it turns out we will post the recipe online, on IG. The routine is that staff picks a recipe, converts it to GF and then makes it. If it needs more work or tweaking, Leesteffy uses her magic talents to make it more “wheat” like. She has a very sensitive palate, and is a miracle worker when it comes to making gluten free taste just like a wheat based version.
We sell our freeze dried (100% GF, no modified wheat) sourdough starter. You can also buy our bread flour in 12oz packs to feed your starter and getting it really well fed, happy and healthy. Both come in resealable packs. Both are available preorder, in person and mail order.
Lemon Bars and Angel Food Cupcakes
Yep, it’s that time of year when we bring our tart/tangy lemon bars back. These are melt in your mouth bars, but not of the overly sweet variety. We like the fresh organic lemons to shine thru so we keep it on the tart side. Like a good tart lemonade!
Our angel food cupcakes are filled with our house made DF lemon curd and topped with a dollop of our house made rose cream. The cupcake is dairy free. (DF) A little bit of sunshine promising summer.
Dubai Chocolate Tart — you guys! So many of you bought these over the weekend. Were they for your mothers? Or did you sneak this for yourselves?
Saturday Special
Cinnamon Buns! Our moist and tender cinnamon buns are a labor of love. They aren’t easy to make GF, unless you want something more akin to hockey pucks. Jala is our expert at making them light and fluffy. They come with or without pecans on top. t.
Don’t forget our BAGEL SANDWICHES. Be one of our regulars who come in EVERY SAT. for a bagel sandwich! Jala is a master at developing awesome sandwich flavors. Come on in. We have a monthly rooster of rotating sandwich flavors, Dairy, DF and vegan!
