What’s Baking, week of June 23, 2013

With 100 degree weather expected this week, we’ve planned a melt free menu. No frosted cakes/cupcakes except by special order and not a lot of chocolate. But lots of new savories this week! We’ve also tried freezing some of our cookies and they are delicious frozen (like the triple chocolate brownie cookie) and also cake pops which taste like ice cream pops. So we will have some frozen cookies (they don’t really freeze, they are just super cold and firm) and frozen cake pops at the markets!  Perfect for a hot day!

Cupcakes:

Frosted cupcakes by preorder only this week due to heat. (Persian Love (cardamon-saffron-rose chiffon cake saffron rose buttercream and fresh sugared rose petals), chocolate or vanilla with ganache or fresh fruit buttercream (kiwi or strawberry).  You can pick up at our kitchen or we can bring to market and keep under ice until you pick up. At the farmers markets we will have a very limited amount of:

Baking hiatus

st-bressonTo the left is my view while i sit here writing this. An ancient three story high wisteria that perfumes the air. I am in france, checking  on my home and taking a bit of much needed R & R. As some of you know, before deciding to open a gluten free bakery in Cambridge, i had all but decided to open one in france. I love it here, but France is a hard place to start a business from scratch and Cambridge seemed more sensible.

This last year has been a very busy year and i thank all of you who have been such supportive customers. It is a pleasure to bake for such enthusiasm. We are expanding Violette slowly but surely. We have not yet “landed” our permanent bakery space, but we are transitioning to a bigger temporary kitchen of our own at 1001 Mass Ave. At 1001, we will operate our retail area pop-up style (ie, we aren’t renovating the infrastructure as we will once we are in our permanent location.) We’ve added new markets this summer and brought on some very talented staff. Not finding our permanent home (yet) has perhaps been a blessing in disguise. Our team will be able to focus on developing our skills as a team while focusing primarily on farmer’s markets, rather than dividing our attention between a brand new bakery/cafe and a much expanded FM schedule. Fingers crossed in the fall that we’ll find the right permanent location, and be ready to take that next step.

In the meantime, as i’ve said to the folks who have inquired about baked goods these last three weeks, we will be back baking soon! So sorry to disappoint those of you who have been  hoping to buy from us these last few weeks. May 31st (fingers crossed) we will be at our first farmer’s market of the summer season. And soon thereafter, open for pop up bakery sales at 1001.

What’s Baking (Week of April 9th) (Last winter market!)

Last market of the winter season!! Come on down to the Somerville Winter market and stock up. We are offering pot pies (no dairy free left, sorry!) buy one get the second  (equal or less value) for 50% off.  Limited supply so best to pre-order if you can. What’s Baking (week of April 1, 2013)

Dairy-Free peeps, i’m making a french apple cake DF by special request, which means i’ll have one extra because my recipe makes a minimum of two. First asked, first received! Also new this week is French Apple-blueberry for those of you who dare to try a new flavor in the context of an old favorite. I can’t wait until black currants are in season because i’m hankering to pair the apple-pear with black currant!

After this week, there is one more market left of the winter season before a 6+ week hiatus! Let us know what you want to stock up on so we can bake it for the last week of the season. We are also open to selling by the pan, for instance an 8 x 8 pan of bread pudding  (freezes well) and so on. Don’t forget to stock up on pot pies as we won’t be making them again until the Fall!

What’s Baking (week of March 25th, 2013)

All along the Mediterranean, including the South of France, Easter week is the time to hunt for spring wild asparagus. Everyone has their secret place to find the best and most tender young shoots. Even though i’m not in France this year, i thought I’d prepare an Easter breakfast quiche with asparagus, tomato, potato, onion and sheep’s feta, for this week’s market. (Fingers crossed i can put my hands on some tender asparagus this week!) Also this week we are making a large batch of pot pies–veg, chicken & veg and dairy free of the same. It will likely be our last batch of pot pies until next fall (we only have 3 markets left this winter!), unless we have a cold wet summer. (Let’s hope not!)  So if you want to stock up, please preorder to make sure we make enough, particularly the DF, which we don’t make many of anyway. This includes special orders of “top-crust only” pot pies.  Lastly, i can’t decide between the vanilla olive oil or the lemon & avocado french macarons. Anyone have a choice? Speak up!

What’s Baking (week of March 19th)

Easter and Passover are both coming up next week and we will be making some special items for your special day(s) Coming up next week: Cheesecake plain and with fresh fruit (we might try our hand at a sheep’s cheese version as well)–all gluten free, of course.  We will have both a flourless (almond flour only) and flour version of our crust.  We will also do a frosted cake with our own easter egg truffles on top. Limited quantities of these items so preorder please.  For passover we will also have our full complement of almond cakes: orange, chocolate-orange, lemon-lavendar and apple. For a list of ingredients (so you can be sure, as we are not passover experts!) email us please. Sorry, we aren’t a kosher certified kitchen.  Again, we bake these in limited quantities, so if one or more is a must have for you, please preorder. . . Now, for this week:
