What’s New this Week!

Donuts! Donuts DoNOT forget Donuts!  You have TWO opportunities this week to order donuts!  Thursday and Saturday. Why? Because we will be short staffed in the kitchen on Saturday, and Donut Day is an All Hands on Deck enterprise. So we have to make a lot LESS on Sat than we normally do.  To ease the pain of fewer donuts, we are offering donuts to PRE ORDER on Thursday as well. (Normally, no preorders on Thursday.) Like always, Vegan donuts ONLY AVAILABLE by Preorder.

Lots of Skill = Swoon Worthy Donuts and Other Gluten Free Baked Goods

Here is the thing about yeasted donuts. They have to be made JUST RIGHT to be swoon worthy. And just right is a learned skill when it comes to GF baking. Its not all about the recipe,  As you will learn if you sign up for our GF baking Class in France, GF items require both LESS liquid and More Liquidity. Sounds contrary right? Lol, come to our class and you will learn this #1 important principle of Good GF baking.

But here is an example. We brought donuts to both Plymouth and Copley Christmas markets. I have always been the #1 donut maker. But in last few weeks, i’ve been training another baker. Saturday Plymouth donuts didn’t have the right liquidity needed. When i tasted one at 11 am, i wasn’t happy with the mouth feel. It was a tiny bit dry. So i called baker, and said, the dough needs more liquidity for tomorrow. While at Copley I saw a non GF vendor who had bought a donut at Plymouth. I brought her a new donut and said, i wasn’t happy with the donuts yesterday, this is how they were supposed to taste!

She laughed and said, I thought the donut I had was good! But after tasting the new one she later said, OMG, i thought the Plymouth donut was a solid donut, but I wouldn’t dream about it. This one will definitely stay in my mind as one of the best donuts i’ve ever had. Tweeking a recipe on the fly is important when making donuts and all GF baking. Weather, change of ingredient brand, etc. ALL EFFECT outcome. And I teach how to counter these effects. Christmas and Hanukkah 

Our Christmas and Hanukkah menus are up. As Christmas Eve is Tuesday this year, we will be open Monday and Tuesday the 23rd and 24th. Closed 25th and 26th. Closed  Sunday the 29th and then open until the 31st. We sampled our Christmas cakes at the Christmas markets and got a flurry of orders this weekend. Get your order in soon if you plan to order one of our cakes. When we get to capacity, we will close orders for individual cakes.

Our Christmas Cookies are also FLYING out the door.  Sezgi makes the most adorable designs. Also If you love traditional ginger cookies you will love our Gingerbread. Moist, and molasses-y. And don’t forget my personal favorites, Pecan Sandy (converted from my Gran’s recipe) and Star shaped Zimtstern (Chewy Almond German Christmas cookie.)

We will have sufganiyot on December 27th. Sorry we can’t make them for the first and last day of Hanukkah, but we are closed December 25 and 26th. And then Closed on Jan 1 for a week. We will have these in limited supply. Please do not order if you do not celebrate Hanukkah. Pick up will be 11-3. We will have Honey Cake and Hannukkah cookies available starting Dec 21st.

Saturday Special

Donuts, Donuts, Donuts. Need i say more? Okay, here are the flavors: Raspberry jelly, Glazed, Maple Glazed, Chocolate Glazed. Both days, same donuts. (Thursday and Sat.) Thursday Raspberry already sold out for preorders.

Weekly Bread

English Muffins and Challah  (DF).  We will have challah all month. We won’t have English Muffins again until Late January. So stock up. .
